My Gluten Free Tropical Meringue


Serves 4

Ingredients

  • 200gm Raspberries in Raspberries Sauce (or Raspberries coulis)
  • 1 Packet Gluten Free Macaroons
  • 1 1/2 Cups Lemon Curd (I used this recipe)
  • Handful mini meringues

Method

  1. Divide raspberry sauce evenly between serving cups.
  2. Crush macaroons and divide evenly between serving cups.
  3. Divide Lemon Curd evenly between serving cups.
  4. Top with crushed meringue and serve.
